I was once dining out at an Italian restaurant which I had been to many times before. I was just eating my garlic bread when I heard what sounded like water dripping. I ignored it and carried on eating when I saw water dripping from a crack in the ceiling. Okay no big deal, I’m sure every restaurant sprouts the occasional leak. But this little leak quickly turned into a waterfall. The dripping escalated into water pouring from the ceiling. The pressure continues to build until it rivals that of a bathroom shower. All the while I’m sitting there meters away with a rapidly growing pool of water filling the dining room.

I didn’t know what to do; I was the only customer as it was the quiet time of the day and the server was up in the kitchen so I was alone. Fearing what could happen if the leak hit an electrical cable or the roof came falling in, I quickly fled up the stairs with the pool of water spreading further into the restaurant. I poked my head into the kitchen where all the staff were working as if nothing was wrong. The server who took my order suddenly notices me and asked if something is wrong. “You do realise your restaurant is flooding don’t you?” I ask him. I explain the situation to the horrified staff who run downstairs.

The leak had thankfully stopped but the floor was soaked with a fair few inches of water. My heart went out to the waiting staff who began mopping up the great mess. Apparently the leak was due to the chefs doing some tinkering with the pipes. A lesson to all restaurant personnel – always leave plumbing work within the capable hands of trained and qualified professionals if you do not want your dining room turned into the set of Titanic!

About 4 years ago, to celebrate an occasion when I was in primary school, we went to a local pizza restaurant. We had been here several times before and we were satisfied with the service and food. But on this particular night, we were shocked with the service that we were provided with.

We had made a reservation prior knowing the place did get busy at times. We all packed in the car, and headed over to the restaurant looking forward to our meal.

When we arrived, the store was packed to the rafters. Every table that we saw was full. We had mentioned our reservation to the person at the front door and we sat down, waiting for our table. We had to wait for about ten
minutes until we got our table. A bit annoying, but we shook off the thought; we wanted tonight to be an enjoyable night.

After a few more minutes, the waiter came and took our orders. We ordered a jug of lemonade, three pizzas for us three kids, a schnitzel for my dad and some pasta for my mum.

Things started out well. We got our jug of lemonade first, which was followed by my parent’s meals. Seeing that my parent’s meals had arrived, I was expecting my big pizza soon.

But after thirty minutes, the time that it took last time we went to the restaurant to get our food, we still didn’t have any pizzas. We did give the staff a bit of grace knowing it was a busy night. We decided to be polite
and wait a bit longer.

Another 20 minutes went past. By this time my parents had already eaten their meals. My siblings and I were still hungry and we were salvaging the only thing that we had to cease our hunger: the jug of lemonade, which was almost empty.

My parents knew something was up, so my mother went up to one of the staff members, a teenage girl, and told her our problem. She said that she would “get it fixed.” Nothing else. By now we were very annoyed.

Another 20 minutes had passed, and my parents were very angry, and my brothers and I were becoming restless and annoyed. It had been an hour and ten minutes and we had still not received our pizzas, whilst everyone else around us did. My parents had almost done a dine and dash, but being the polite and well-mannered people they are they decided not to. My mother then got the attention again of the teenage girl, clearly stating that we had ordered our food over an hour ago and we were about to leave. The girl apologizes, says it will be ready soon and rushes back to the kitchen area.

It had been an hour and a half. We were relying on water to fill our stomachs now, the nine-dollar lemonade jug being drained long ago. The girl reappeared again, but this time with the three pizzas in her hands. We were happy that we finally got them, but were extremely annoyed that it took that long. Being very hungry and tired, we dug into the pizzas. But they just didn’t taste as good as I remembered it. It seemed like the chefs were in such a rush to get them to us that they just piled ingredients onto the pizzas without even thinking about quality.

After almost two hours, we were finished with our food, paid for our meals and requested that our pizzas be boxed up so we could take them home and eat them later. We were escorted out. But when we were walking back to the car, we realised that they never gave us the boxed up pizzas! Furious, we marched back up, told the staff, grabbed them and hastily made our way back to the car.

It has been 4 years now and that whole experience has left me with a bad impression of the restaurant. We usually leave tips, but we were so unimpressed with the quality of the food, the time that we were waiting, and the bad customer service we received, that we left no tip. It would have even been fine if the waiter had come up to us, told us the pizzas were coming late, and asked my parents if they would like their meals served with ours. That would have been a bit more pleasant, if we were told what was going on. If I had to go back to that day, I would have told my parents that I just wanted to go to the fast food place across the street. Looking back now, I believe that doing that would have been more enjoyable than waiting one and a half hours on a pizza.

Quite recently a rather unusual and downright dangerous incident took place in the kitchen at the restaurant where I work. We have these huge pots to cook our soups and other hot meals in. There was a big pot of boiling oil on the grill for our meat dishes that we were serving that day. As I was passing by I noticed one of the chefs filling up a jug of cold water; to my horror and for reasons I cannot explain, he proceeded to pour it into the pot of oil.

What happened next highly resembled a scene from the movie Dante’s Peak. There was a BOOM! as a volcanic-like jet of steam shot up in the air and the flames on the grill went wild. Everyone who was standing nearby had to run away as the boiling oil sprayed everywhere. A panicked chef managed to reach for the panel on the oven and switch the grills off. I was in a state of shock; never in my years of working in the restaurant business have I ever seen a near disaster like that. It was a miracle that no one was hurt.

I had a reservation March 4th @ 7pm – party of 6, at “M’s” in Miami.

Overall, our experience at M’s was very costly and painfully sub-par. I read their website’s bios etc. and all of their press, especially from NYC critics, including the NY Times and James Beard pieces.

M’s should NOT believe everything it reads. Unfortunately, we are only as good as our last performance. Instead of focusing on all of their press (earned or purchased), they should be seizing the opportunities that their patrons graciously provide to them each and every business day! M’s must learn to thrive in the moment or it will be obliterated by an avalanche of its own press clippings!

I too received my culinary education and training in NYC, was published in books, written-up & featured by the NY Times, did the Oprah Winfrey Show, did several Food Network shows and The NY Chocolate Show, was honored by the Salon De Culinaire for my sugar work, sold a successful retail confection line in exclusive NYC shops, blah, blah, blah, blah, blah!

I do not look back, neither should M’s.

M’s service staff is unsophisticated, grossly uninformed about FOOD and rude. And very, VERY unorganized! More “CLUELESS” than “GENUINE.”

I notified the restaurant the week before that one guest in my party was vegan. Nothing was prepared by M’s to accommodate this request ahead of our arrival. After being seated, I asked our server if the chef had a menu suggestion since I can not eat dairy. I was told to select from the menu and request that cheese or cream etc. be eliminated. The server said “They never make any substitutions.”

Furthermore, when we asked if a specific cheese was pasteurized, our server told one of my guests (who is 4 months pregnant and can not eat unpasteurized dairy) that the cheese “is OK for you because it is either pasteurized or aged 6 months”! IT was truly the most incredulous and IDIOTIC logic we had ever heard. And a dangerous path to follow for a business catering to the general public.

The kitchen and dining room are completely out of sync – the server placed the 1st course dishes randomly – he watched as we tried to unscramble his puzzle and match the 1st course dish with the guest that ordered it. He never attempted TO correct or apologized FOR his mistake. One guest’s entree was sent out 8 minutes AFTER all the others were served!??? Again, NO warning, NO explanation, NO apology. The server even removed one of my guest’s plates and utensils while we were still eating!!!

When we ordered dessert, I asked the server if any items were dairy free. He said no, so I asked him what flavor sorbets were available. He said “rhubarb and white chocolate.” I then ordered the rhubarb sorbet. He then tells me “no, it is rhubarb and white chocolate.” I then ask him “you mean it is one flavor – rhubarb with white chocolate?” The server then tells me “no, it is 1 scoop of rhubarb and 1 scoop of white chocolate!” Then I tell him I will take 1 scoop of rhubarb – HOLD the white chocolate since I can not eat DAIRY and white chocolate HAS DAIRY IN IT!!!” He was informed throughout the meal about the dairy issue. His demeanor was callous and extremely offensive. It is outrageous that M’s would subject their guests to such a CIRCUITOUS route when ordering a DESSERT!!!

Actually, for M’s to present a dessert menu without any main item dairy-free is very neglectful and un-evolved. THIS IS THE 21ST CENTURY!

Our hospitality experience at M’s was regrettable and truly unforgettable. This restaurant touts all of their NY press on M’s website but if  THEIR “performance” that night was on a NYC stage rather than in a Miami dining room, their “show” would be closed after a few performances. LIGHTS OUT!

Overall, it was the worst dining experience for all of us in a VERY LONG TIME!!! Every chef has a restaurant in him, which in M’s case was the best place for it.

This joint really does believe its own press! Miami’s M’s is nothing more than the flawed formula that PLAGUES our hospitality industry: 1 cup of BAD service, a dash of MEDIOCRE food and a pinch of SHABBY decor for a WAD of $$$!
